The mild spring temperatures and plenty of water have allowed for a good germination of all varieties, followed by optimal bloom conditions. The summer rainfall had allowed the plants to maintain a maturing process even in the hot month of August thus guaranteeing a total ripening. The harvest of Sorbara began in the last week of September.
The grapes arrived at the winery and, after a careful selection, were de-stemmed and softly crushed. The contact with the skins only occurred for a few hours, the must was then immediately brought to 0 ° in order to stop the fermentation. At the time of the new vintage we began the Charmant process starting from the must, thus keeping its rich aroma.
The Corte degli Attimi, with its pleasant acidity which is the unmistakable feature of this type of wine, goes very well with cold cuts meats such as salami or simply as an aperitif.
