The harvest was in the Savignano area by the Panaro river with a constant maturation process.

The summer was hot then and brought forward the maturation especially of the Cabernet Sauvignon which we harvested the second week of September.

Being the Sangiovese a late maturing vine we waited until the last week of September to harvest it until it reached its full maturity.

Whilst the Cabernet grape is already 15 years old, thus at the height of its production, the Sangiovese grape was only planted in 2009, so we decided to select only the best grapes.

Winemaking process

Collected in boxes of 20 kilograms were first di-stemmed then fermented separately, the Cabernet for 6 days and the Sangiovese for only three days.

The fermented wine after a light filtration has then been transferred in second barrels for about 12 months. The wine has been bottled in September 2014.

Wine pairing

A wine of great structure and longevity that can be notices since the early months in the bottle, it goes well with red meats or with juicy dishes and blue cheeses.
